Miso caramel, puffed rice, smoked salt.
Black sesame is toasted and ground to a paste each morning; anything older than a day tastes flat by service.
The parfait is frozen in a straight-sided mould and cut, not scooped. Miso caramel goes underneath, puffed rice and smoked salt on top. There is less sugar in it than in most of our savoury glazes.
