About this dish
Pyengana clothbound, house lavosh, native pepper.
Pyengana clothbound is the only cheese we serve — a Tasmanian cheddar aged eighteen months, crumbly at the edge and still creamy at the centre.
Yuzu marmalade is made in winter and kept all year. House lavosh is rolled thin enough to see light through and baked to order. Native pepper goes over at the last second.
