Palm sugar caramel, black vinegar, charred shallot. Berkshire pork, Gippsland.

Berkshire pork from Gippsland, jowl only — the hardest-working muscle on the animal and the one that rewards time most. It goes in at 68°C overnight and comes out able to be cut with a spoon.

Palm sugar caramel is cooked to just past the point most kitchens stop, so it carries bitterness as well as sweetness. Black vinegar cuts it. Charred shallot is the only other thing on the plate.
